Favorite Original Recipes Collection

Tasty Hearty Bean Dip or Side Dish

Prep time about 5 minutes, plus heating time

Ingredients

One large can (30 oz.) refried beans

One small can (11 oz.) drained Mexicorn

One small can (7-10 oz.) drained diced tomatoes or salsa

One small can drained diced green chilies

One pound shredded cheddar or cheddar blend cheese

Optional additions:

¼ cup chopped cilantro, ¼ cup green onion, ¼ cup sliced black olives

Add any or all of the above. Some of these items may already be in the salsa or canned tomatoes depending on the type and brand you purchase.

Preparation

Open all cans and drain liquid from those that have liquid.

In a 2 liter microwaveable bowl mix all canned ingredients together, as well as any of your additional items you selected (cilantro, onions, olives).

Mix in ½ to ¾ of the shredded cheese.

Top with remaining cheese.

Cover and Microwave on high for 3-5 minutes. Turn bowl ¼ turn and microwave for an additional 3-5 minutes at 50% or until dip is hot and cheese is melted. (Times and power may vary depending on your microwave.) Let stand for 2 minutes in the microwave.

Serves 8-10 with crispy tortilla chips, or spread on a flour tortilla as a sandwich compliment.

Or serves 4-6 as an extra yummy side dish with your favorite Mexican entrée.
